Three year French barrel-aged brandy, soaking with spice and caramelized oak sugars, with freshly pressed sweet chardonnay grape juice added. Aged another 2 years, the results are marvelously complex, with the fulsome depth of a Vin Santo to a Ratafia but the crisp acidity care of our New England climate, freshly-crushed grapes and biscuits meet honey, raison, and vanilla chai spice. Always have with charcuterie, cheeses, fruits, and Marcona almonds. Enlivens a crème brulee or dolce de leche.
